Chocolate Granola {gluten free, healthy}

Ingredients
  

  • 2 cups gluten free rolled oats
  • 1/4 cup slivered almonds
  • 1/4 cup chopped pecans
  • 1/4 cup unsweetened shredded coconut
  • 1/4 cup coconut sugar
  • 2 tbsp cocoa powder
  • 2 tbsp flaxseed meal
  • pinch cinnamon
  • pinch salt
  • 1 tsp vanilla extract
  • 1/3 cup melted coconut oil 3 tbsp solid
  • 1/4 cup maple syrup
  • 1/4 cup mini chocolate chips

Instructions
 

  • Preheat oven to 325 degrees and line a baking sheet with parchment paper
  • Add all ingredients to a large mixing bowl and stir to combine
  • Pour out onto the lined baking sheet and press into a thin layer
  • Bake at 325 degrees for 20-25 minutes
  • Allow to cool for 1 hour before breaking apart into clusters
  • Store in an airtight container on counter or in fridge for up to two weeks
