Let’s talk about this Easy Kale Salad with Lemon Dressing. First off, if you don’t like kale, you can easily sub baby spinach or arugula. But the kale gives a nice crunch that I love, and it holds that crunch even when it’s tossed with the lemon dressing. 

The Lemon Dressing in the Easy Kale Salad is a breeze to throw together. And you only need 3 ingredients! It’s just lemon juice, olive oil, and honey…that’s it! The sweetness of the honey combined with the tartness of the lemon juice is magical. And then when you add the olive oil to it, you get this perfectly balanced lemon dressing that adds tons of flavor to your bed of greens. 

I’ve always loved fruit on a salad. Whether it’s a fall salad with apples and cranberries or a spring salad with mixed berries and mandarin oranges, fruit adds healthy carbs to a salad, which is important when you’re eat a macro-friendly diet. For this salad, you can use whatever fruits you have on hand!

When I say this Easy Kale Salad with Lemon Dressing is easy to make and requires little prep, I’m not kidding! Yes, it contains chicken, but that doesn’t mean you have to spend lots of time in your kitchen cooking. There are several options for pre-cooked chicken you can throw on this salad and have it ready within 5 minutes! Rotisserie chicken is always an easy option that’s also very affordable. Frozen diced chicken that is precooked and easily warmed in the microwave is another great option. Trader Joe’s sells “Just Chicken” breasts that are fully cooked and ready to be added to salad. Costco sells several pre-cooked chicken options, some of which are already individually portioned for you. Canned chicken is another option you can use. My point is, you don’t have to spend hours in the kitchen prepping in order to eat clean. Shortcuts are always welcome in the kitchen!

This Easy Kale Salad with Lemon Dressing is low in fat, but you can easily add healthy fats to it if needed. Pecans and almond slivers are great healthy fat options if you’re tracking macros and need more fats.

Kale is a hearty green that holds up to dressing for longer periods of time, which makes this salad a great option to take with you for lunch. Just package the chicken separately and add it right before serving.

Ingredients
  

  • 6 ounces cooked chicken breast see above for options
  • 2 cups chopped kale
  • 1/3 cup blueberries
  • 1/3 cup raspberries
  • 1/3 cup strawberries
  • 2 tablespoons lemon juice
  • 1/2 tablespoon olive oil
  • 1/2 tablespoon honey

Instructions
