Broccoli Cheese Casserole (gluten free)

I’ll never forget the first time I had broccoli cheese casserole because it was a magical moment. The melding of the broccoli, cheese, and buttery crackers sent my tastebuds into a frenzy! From that point on, it became my favorite holiday dish!

My aunt is in charge of making the casserole for Thanksgiving, and she goes out of her way to make sure it’s gluten free so I can enjoy it! Finding gluten free crackers that taste like Ritz used to be a challenge, but Schar Gluten Free Entertainment Crackers taste so much like the real deal that your whole family can enjoy this casserole without even realizing it’s gluten free!

So here’s what you’ll need for this delicious recipe: (You can double the recipe to feed a larger crowd!)

  • 16 ounces broccoli florets, washed and cut into bite sized pieces
  • 8 ounces Velveeta cheese
  • 8 tablespoons (1 stick) butter, divided
  • 1 bag Schar Gluten Free Entertainment Crackers (or 1 sleeve Ritz if not gluten free)

Directions:

Preheat oven to 350°F

Place broccoli in a large pan and add about 1 inch of water to the bottom. Cover with a lid and turn heat to medium-low. Simmer for about 15-20 minutes, until broccoli is tender

Drain broccoli and add to an 8×8 or 9×9 casserole dish (no need to grease it)

Cut 4 tablespoons butter and 8 ounces Velveeta cheese into small cubes. Scatter the cubes over the broccoli

Using your hand or a meat tenderizer, crush bag of crackers into small pieces. Melt 4 tablespoons of butter and mix with crushed crackers in a medium mixing bowl

Top broccoli, cheese, and butter with the cracker mixture

Bake in oven at 350° for about 20-25 minutes, until cheese is melted and crackers are golden

Store leftovers in an airtight container in the fridge for up to 3 days
